Q Is it okay to dishwash your knives? And do I need buy a whole block of knives or is one knife enough? Chris James, by email
Jun Tanaka answers: I certainly wouldn’t recommend it! Decent knives don’t come cheap, so always look after them properly. Clean them in hot soapy water and dry them straight away. The most important thing about knives is to sharpen them regularly on a stone.
You definitely don’t need a whole block of knives. A lot of amateur chefs tend to go out and buy a whole set and then only end up using a couple of knives. Start with a decent brand - Global, Gustaf Emile Ern and Victorianox are my favourites. Then I recommend you buy a 20cm cook’s knife, a paring knife and a carving knife.
