HOW TO PREPARE


Serves any number. Cooking time is short.



INGREDIENTS

25mm piece minced ginger
clove crushed garlic
1 small red chilli
3 peeled and diced mangoes
zest and juice lime
225g soft light brown sugar
225g cider vinegar
pinch each of ground cinnamon and coriander

METHOD

Add the cinnamon, coriander, sugar, vinegar and mango. Bring to the boil
and simmer for at least 20 mins until it becomes lovely and jammy.
Serve with lime wedges and fresh coriander.
