HOW TO PREPARE

Short on time? Use ready-made ice-cream or sorbet.


Serves 4. Cooking time is medium.



INGREDIENTS

12 small figs
150g dark brown sugar
300g caster sugar
2cm cinnamon stick
8 pepper corns
1 sprig of fresh rosemary
300ml of Port
450ml of Shiraz
 
Ice-cream

 
1 ripe Mango, pulped
juice of two passion fruit
juice and zest of one lemon
6oz sugar
½ pint of water

METHOD

For the figs

 

Place all the spices and rosemary in a warm wok or saucepan. Add the wine then the sugar and boil until the ingredients boil and thicken into a syrup. Carefully place the figs into the syrup and boil for 5 minutes. 
 
For the ice-cream 

Bring the sugar and water to the boil. Add the rest of the ingredients and stir . Place everything into an ice cream maker and slowly freeze. Serve with the figs.
