HOW TO PREPARE

As with most meat dishes, the secret lies in using good-quality mince so do buy the best you can afford.


Serves 4-5. Cooking time is medium.



INGREDIENTS

1 ½ lb minced beef
1 ½ lb minced pork
3 slices bread to make into breadcrumbs
4 oz medium onions, chopped
2 cloves garlic
4oz red and green bell peppers
6 tbs tomato ketchup
1 tbsp, thyme
1 tsp chilli pepper flakes
1 tsp salt
1 tsp black pepper
2 tbsp Worcestershire sauce
1 egg
12 rashes streaky bacon for lining one tin
2 loaf tins

METHOD

In a large bowl put the beef and the pork together.
Put the bread in a food processor and make into bread crumbs empty the bread crumbs into the meat.
In a processor put the onions garlic bell peppers and blitz until roughly chopped add to the meat in the bowl.
Add all the ingredients to the mixture in the bowl and mix well together either by hand or with a spoon.
You will require two loaf tins line one tin with the streaky bacon. 
Put the meat mixture in the two tins.
Cover the top of the tins with baking Foil.
Put in a pre-heated oven temp 180oc for 30 minutes after which remove from the oven and drain out the oil.
Remove the baking foil and put back into the oven and bake for a further 30 minutes.
Remove from oven this can either be served hot or cold with a salad and potatoes.
