HOW TO PREPARE


Serves 1. Cooking time is short.



INGREDIENTS

1 x 200g salmon fillet, skinned   £1.99
2 tbsp pesto   20p
100g cooked spaghettini   24p
6 sunblush tomatoes, roughly chopped   65p
5 Baby mozzarella balls   £1.36
2 tbsp chopped parsley   20p

 

From the Store Cupboard:

2 tbsp olive oil
Dash vinegar

 

Total cost: £4.64 per portion

METHOD

Heat the oil and add the seasoned salmon fillet, cook for 2 to 3 minutes on each side.

 

Meanwhile, mix the warm spaghettini with the pesto and parsley.

 

Arrange the sunblush tomatoes and the mozzarella in a bowl top with the warmed pasta top with the cooked salmon.
