INGREDIENTS
3 tbsp olive oil
1 medium sweet potato, cut into long, fine matchsticks, then blanched
1 tsp fresh red chilli, finely chopped
2 small shallots, finely sliced
1 pak choi, roughly shredded
1 tbsp Thai fish sauce
1 tbsp palm sugar
1 tbsp sherry vinegar
4 tbsp fresh coriander, roughly chopped
150g prawns
Salt and pepper
Wedge of lime to serve

METHOD
Heat the oil in a pan, then add the shallots and sweet potato, cook for 2 minutes. Add the chilli and pak choi, stir quickly. Finally add the prawns, vinegar, sugar and fish sauce, then mix well, do not over cook. Season well and add the coriander. Serve with a wedge of fresh lime.
