INGREDIENTS
1lb sausage meat
4 tomato concasse
1 tbsp tomato ketchup
Splash Worcestershire sauce
Oil
2 tbsp olive oil
8oz pre-cooked lentils
4oz boiled ham
1 clove garlic
½ onion, finely chopped
4 tbsp chicken stock
1 tbsp chopped parsley
Salt and pepper

METHOD
Heat oil and add onion and garlic, sweat, do not colour. Add lentils and the stock.
Cut ham into dice and add to lentils, season and add chopped parsley.
Meanwhile mix sausage meat with tomato concasse, ketchup and Worcestershire sauce and season. Shape into cakes and fry in 1 tbsp oil.
Put lentils in bowl and cake on top. Garnish with tomato concasse mixed with chopped onion, oil and seasoned.
