HOW TO PREPARE


Serves 1. Cooking time is medium.



INGREDIENTS

100g sirloin steak
1 large tomato, sliced
1tsp ginger, finely chopped
¼ red pepper, chopped
½ spring onion, chopped
1 medium sweet potato, diced
½ tsp parsley
1 Tbsp curry powder
1 tbsp sesame oil
1 tbsp soy sauce

METHOD

Slice the tomato, sprinkle with curry powder and fry in a heavy bottomed pan.

 

Finely dice the sweet potato and fry in a pan in olive oil until tender.

 

In another frying pan add the sesame oil, spring onions, sliced red pepper and soy sauce and stir fry for a few minutes until tender. Once cooked, remove the peppers and spring onions from the pan.

 

Slice the sirloin steaks into 1 cm strips and add them to the same pan that the peppers and spring onion were cooked in. Colour the steak on both sides, add a tsp of freshly grated ginger, add the peppers and spring onion.

 

Chop the parsley and stir it through the beef mixture and also a little through the sweet potatoes.

 

Serve the beef on top of the lightly curried tomatoes with the diced sweet potato.
