Sausage with refried beans

HOW TO PREPARE
Serves 1. Cooking time is short.
INGREDIENTS
65g sausage
2 tbsp tomato ketchup
Pinch chilli flakes
1 tsp cumin seeds
1 tsp coriander seeds
1 tomato
2 garlic cloves
¼ red onion
1 spring onion
125g black beans
½ chilli
pinch sugar
½ tbsp basil
1 tbsp coriander
1 lime

METHOD
Wrap one garlic clove in foil and put in oven with the tomato drizzled in oil to roast.
Cut the sausage in half and put on a skewer. Brush with oil and tomato ketchup and put in a pan to caramelise; once caramelised transfer to the oven to cook.
Heat olive oil in a pan add remaining garlic and onions to soften
In another pan add cumin seeds, coriander seeds and chilli flakes to toast; when toasted crush down to a fine crumb using a pestle and mortar. Add to the softened onions with the beans and cook for a few minutes until spices mixed through.
When the tomato and garlic are roasted put in a blender along with the chilli, sugar, basil, coriander, pinch of chilli flakes some olive oil and season. Blend to a smooth texture and serve on top of the sausage and beans.
