HOW TO PREPARE


Serves 1. Cooking time is short.



INGREDIENTS

1 chicken breast beaten out (boned & skinned)       
1 tsp curry powder
½ tablespoon vanilla oil
1 tsp Smoked paprika
½ litre of chicken stock                                                
1 shallot
2tbsp olive oil                                                               
1 red chilli
1 clove garlic
1tsp caster sugar
1 tsp white wine vinegar
1 can chopped tomatoes
1 vanilla pod             
1 star anise                                                   
1tbsp chopped parsley
1 Lemon, juiced
1tbsp black pitted olives
2 large courgettes
1 red pepper
10g butter
Green beans

METHOD

Slice the chicken into strips then season with salt and pepper, curry powder, vanilla oil and smoked paprika.

Cook the seasoned chicken in a hot pan with the chicken stock for about a minute. 

Sauté shallot, chilli & garlic in a pan until soft, add sugar & white wine vinegar & reduce for 30 seconds, add chopped tomatoes, vanilla pod and star anise and cook until broken down, season & finish with fresh parsley, lemon juice & olives

Spaghetti the courgettes and red pepper on a mandoline and quickly sauté with the butter, add salt & pepper and finish with vanilla oil.

Blanche the green beans.
