HOW TO PREPARE


Serves 8+. Cooking time is medium.



INGREDIENTS

900g plain flour
4 tsp baking powder
8 tsp ground ginger
3tsp ground cinnamon
1/4 tsp cayenne pepper
Pinch salt
500g unsalted butter
400g caster sugar
9 tbsp golden syrup
3 medium eggs, beaten

METHOD

Sieve all of the dry ingredients, apart from the sugar, into a mixing bowl. Add butter and sugar and rub in till sandy texture is formed. Mix in the syrup and enough of the beaten egg to make a fairly stiff dough, continue mixing till smooth.(This can be done a machine.)

 

Pre-heat the oven to gas mark 4/180c.

 

Form into a ball and wrap in cling film. Place in fridge to firm up for at least 45 mins. Roll out to 1/8 th inch thick. Cut out desired shapes. Place on non-stick baking sheet and bake in pre-heated oven for about 10 / 12 mins till golden.

 

Remove from oven and cool on the tray. When cold decorate with piped royal icing.
