Hi Poli,

For two very good, thin crust 7 to 8 Inch pizza bases try the following: 8 oz plain (soft) flour, 1/4 pint warm water, 3/4 oz fresh yeast, 1/2 tsp salt, 1/2 tsp sugar, 1 Tbsp olive oil (goes in when you melt the yeast in the water)(you may need slightly more flour if this is too sticky - with practice you'll get used to how to use it). This is authentic to what you'd get in Italy. Make as normal bread, prove once and stretch/roll/toss it to use after you have knocked back - put toppings straight on and immediately into a hot oven.
