This gorgeous recipe is inspired by Italian airport cafes where great quantities of food are cooked very simply using a minimal list of ingredients. This is roast chicken and chips, Venice airport style!

SPANISH EGGS WITH RED PEPPERS AND PRAWNS

This is found in tapas bars and is known as the ‘revueltos’ as it revolts or jumps around the pan as the prawns cook! Less of a tortilla and more of a quick scrambled egg it is a fabulous dish and much more interesting than an omelette, with more of a creamy consistency.

Australian-born food queen Jill Dupleix now lives in London, where she writes and photographs her weekly food column for The Times Weekend. Jill was voted Cookery Writer of the Year at the Guild of Food Writers Awards 2002 for her work in The Times.

Jill survived eight years as an advertising copywriter before combining her two great loves - writing and food.

Her innovative style, self-taught knowledge, and infectious enthusiasm for eating and drinking established her as one of the most influential food writers in her native Australia, where she was food editor of the Sydney Morning Herald and the Melbourne Age.


Since becoming The Times Cook in 2000, Jill has firmly established herself as one of the most exciting and inspirational food writers in Britain today, and was voted Cookery Writer of the Year at the Guild of Food Writers Awards 2002 for her work in The Times.


The author of ten lively cookbooks, Jill lives with husband Terry Durack in London where she writes her weekly food column for The Times Weekend. Her irresistible recipes and lively writing also appear in Food and Travel, and Australian Gourmet Traveller. Jill now shoots her own food photography as well, and it is her pictures that appear in The Times and in her books, Simple Food and Very Simple Food.


Terry is a restaurant critic for the Independent on Sunday, and the European Editor for Australian Gourmet Traveller, in which Jill's travel photographs appear.
