HOW TO PREPARE

Once made, the sauce will keep in the fridge for several days. You can use it on chops and ribs, too.


Serves any number. Cooking time is long.



INGREDIENTS

Chicken wings - to suit your party size

 

Barbecue Sauce

2 tins of chopped tomatoes
1 whole orange
Small tin of pineapple pieces or rings
1 onion
Half each of green, red and yellow peppers
1 cup brown sugar
Pinch  salt/pepper 

Pinch cajun seasoning
1 jar of any store bought smokey bbq-flavored sauce

METHOD

Combine all the above ingredients in a sauce pan bring to a boil, then at the end add the store bought barbecue sauce, and continue to cook for on a low heat for ½ hour more. Remove from heat and  blend all together using a hand mixer.  Your sauce will be ready to use. This can then be kept in the fridge for up to 2 weeks.

 

Once you've made the sauce, rub this into the chicken wings and marinade overnight.

 

Place wings on a outside grill and cook slowly. Once cooked - about 5 minutes - cover in the barbecue sauce and continue cooking for about 3 minutes.
