PEA AND ASPARAGUS SOUP

This delicious and simple soup captures the freshness of spring in the combination of peas and asparagus. Frozen peas give as much flavour as their fresh counterparts and asparagus adds an earthy flavour that is complimented by the savoury bacon and creamy goat's cheese. This is the perfect meal to enjoy for lunch or suppertime snack.

MUSHROOM SAUCE BAKED PORK CHOPS

This recipe works equally well using chicken breasts instead of pork chops.

Serves any number. Cooking time is medium



INGREDIENTS

Crumble:
300g plain flour,
175g unrefined brown sugar
170g unsalted butter
Extra butter for greasing if you dont have a silicon tray.
1tbsp of both cinnamon and sugar ontop before putting in oven.

Filling:
450g Pink Lady apples, peeled, cored and sliced thinly
50g unrefined brown sugar
1 tbsp plain flour
1 pinch of ground cinnamon

METHOD

1. Preheat the oven to 180C/350F/Gas 4.
2. Place the flour and sugar in a large bowl and mix well. Take the butter and rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs. Add more butter or more flour untill mixture resembles breadcrumbs.
2. Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon.
3. Get a 24cm/9in silicone dish or butter a ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top, making sure its evenly distributed, then add extra sugar and cinnamon ontop.
4. Bake in the oven for 30-40 minutes if using a silicone dish, 40-45 if using a glass or ceramic dish, until the crumble is browned and the fruit mixture bubbling.
5. Serve with thick cream, ice-cream or custard. [Best with custard]
