HOW TO PREPARE


Serves 4. Cooking time is long.



INGREDIENTS

50g white bread crumbs
50g self raising flour
110g suet
225g raisins
pinch salt
1½ tsp mixed spice
grated rind 1 orange
3 eggs
3 tbsp rum

 

Rum syrup
2-3 tbsp rum
110g dark brown sugar
50g unsalted butter

METHOD

For the syrup

Melt the sugar and rum together whisk in the butter to make a shiny syrup

 

For the pudding

Butter a 1½ pint pudding basin. In a bowl mix breadcrumbs, flour, raisins and suet together. Mix well, then add salt, mixed spice and orange rind.

In a small basin beat eggs and rum together then add to the dry mix stirring well. Fill the pudding basin with the mixture,cover with greaseproof paper and foil and tie with string. Steam for approximately 4 hours,turn out onto a heated dish and serve with the syrup.
