HOW TO PREPARE


Serves 3-4. Cooking time is short.



INGREDIENTS

Dressing:

2 slices of white bread
4 tbsp milk
2 cloves of garlic, peeled
1 lemon, juice and zest
6 oz fresh shelled walnuts
150 ml virgin olive oil
Seasoning 


Salad: 

10 slices Parma ham
50g diced bread, cubed
25g butter

150g mixed radicchio and rocket
5g picked flat leaf parsley   
100g cooked French beans   
100g blanched and peeled broad beans       
Virgin olive oil
Parmesan shavings

METHOD

To make the dressing, tear the bread into the food blender and moisten with the milk.  Add the garlic, lemon and walnuts and blend to a paste, adding the olive oil and seasoning

Grill the Parma ham until crisp. Fry the cubed bread in a little butter until golden brown.

Place the salad leaves and the beans into a bowl and add the dressing and season and mix.

Place into the plate and top with the crispy ham, parsley and the croutons.
Drizzle with olive oil and top with the Parmesan shavings
