HOW TO PREPARE

We used two mangoes on the show, but one mango would also be fine. Just split it in two and use half for the base layer and half for the salsa.

Rather than pounding the steak with a mallet, Nancy likes to use her fingers and give it a massage instead while squeezing in the flavours of the marinade.

The honey should be good quality, as bad honey can make the dish too sour.

Instead of mango you could also use apples or pears and experiment with the recipe.


Serves 1. Cooking time is medium.



INGREDIENTS

200g sirloin steak
3 tbsp clear, good quality, runny honey
2tbsp dark soy sauce
2 mangoes 
4 long red chillies

½ tsp black pepper
1½ tbsp sunflower oil

METHOD

Put the steak, honey, soy sauce, black pepper and oil together in a bowl. Massage the marinade into the steak with your fingers for a couple of minutes, to make sure it is coated in the mixture and has absorbed the flavours.

 

Place the steak into a hot griddle pan and fry for a couple of minutes on each side, or longer if you prefer, and leave to rest.

 

Meanwhile finely slice the chillies, and finely chop one of the mangoes, and mix together to make salsa.

 

Slice the remaining mango and lay on a plate in a flower pattern or similar. Slice the steak into strips and lay on top of the mango base. Serve with the mango salsa on top.
