HOW TO PREPARE


Serves 4. Cooking time is short.



INGREDIENTS

500 gm crumbled feta cheese
1 tbsp honey
1 tbsp cracked black pepper
2 tbsp dried basil
125 ml extra-virgin olive oil
Zest and juice of 2 lemons

METHOD

Pulse together the feta, basil, honey and peppercorns and dried basil in a food blender until combined.

Add the olive oil and lemon juice, alternating between each and pulsing after each addition, until the mixture is dense but spreadable.

Remove to a serving plate, garnish with lemon zest, and serve as part of a meze
