If you can't get Antony Worrall Thompson - and I guess he is very busy - have you tried the other Lancashire chefs, Andrew Nutter from Nutters restaurant in Rochdale, Paul Heathcote from Simply Heathcotes in Manchester and Simon Rimmer from Greens Restaurant in Didsbury.
They are all very good chefs, keen to develop talent - and live in the area
