Hi Paul
The book Cupboard Love by Tom Norrington Davies is really good and tells you how to cook with the contents of a store cupboard.

To get you started, though, I would stock up on couscous, stock cubes, jars of pesto, Thai green curry paste, tinned tuna/salmon and mackeral/sardines, dried noodles or wok-ready ones that are vacuum packed, tinned beans (cannellini, chickpeas etc), dried herbs and spices (cumin, coriander, chilli flakes etc).
