RE: INSTANT FRESH TOMATO SAUCE

Here's my favourite tomato sauce - it's really sweet andhas some texture as well, but maybe not quite so instant as Tigger's...
Slice an onion, a couple of big carrots and 2 or 3 sticks of celery and cook for 10 minutes or so in olive oil, till they're nice and soft
Add a couple of tins of chopped tomatoes and season with salt, pepper and sugar - maybe a little tomato puree if you really want but not neccessary
Let it plooter away (or burp as AWT would say!) for 20 mins or so and then blitz.
It looks more orange than red because of the carrots but I assure you it's gorgeous!
